I’m a big fan of Mexican food. When I started Trim Healthy Mama, I was really excited to see that I could still eat a lot of Mexican meals. Total win! There are a few I make at home and one of my favorites is black beans wraps. I was pleased to find out this was super easy to make into an E meal. Today, I am going to share my Trim Healthy Black Bean Wraps and share how you can make it, too! Let’s get started!



I always have black beans in the freezer. We usually have uncooked beans at the house so I make them in bulk and then freeze what I don’t use. It’s wonderful and way cheaper than canned (for the record I buy those, too, when they’re on sale and I’m in a hurry). Anyways, I get these out and let them thaw in the fridge or on the counter, depending on how soon I need them. Once thawed, I spread them out on a sprouted tortilla (we like Ezekiel) and cover them with low fat cheese and salsa. If the salsa has a kick to it, it makes it even better. I put it all together in the wrap and then fold it up and cook for about 10-15 minutes on 350 degrees. Once it’s done, I sprinkle it with kefir (used as a sour cream substitute) and am ready to eat. This seriously is one of our favorite meals to make and it’s super easy and quick, too. I hope you enjoy it, too!

Trim Healthy Black Bean Wraps (E)

*Black beans (15 ounces)

*Sprouted tortilla wraps (we use Ezekiel brand)

*Cheese (use 2% or less hard cheese or skim mozzarella)

*Salsa (a simple garden salsa is best)

*Kefir (using a skim cow’s milk) or low-fat sour cream

Put black beans, salsa, and cheese on a tortilla and wrap until closed. Heat for 10-15 minutes on 350 degrees. Once finished, cover lightly with sour cream or kefir. You can even eat this with some brown rice to keep this a yummy and safe E meal.
